This year Valentine’s Day is on a Sunday so I thought it would be a great idea to share a brunch inspiration. It doesn’t take too much time to prepare it and you don’t need a lot of ingredients.

Valentine’s Day Brunch

Ingredients

  • 2 Slices Bread
  • 2 Eggs
  • 1 Avocado
  • 100 g Cherry Tomatoes
  • 50 g Greens

Instructions

  1. Halve the tomatoes and place them on a parchment paper sheet.

  2. Drizzle with Olive Oil and season with salt and pepper to taste.

  3. Close the ends of the sheet together, making a bag with the tomatoes inside.

  4. Bake for 10 minutes at 400ºF.

  5. Cut a slice of bread using a heart-shaped cookie cutter.

  6. In a pan, crack an egg in the middle of the bread. Season it with salt and pepper to taste.

  7. Slice the avocado.

Serve everything together on a plate with greens. You can drizzle more olive oil over it or even use the tomato juice as a dressing for the greens.
