Hubby and I are trying to eat less carbs. I wouldn’t say we’re on a keto or low carb diet because we don’t like to label our food choices. Let’s say we’re just paying more attention to our food ratio consumption.
I’m having a lot of fun looking for new recipes on Pintrest and discovering so many possibilities! I recently discovered Stevia as a great alternative to sugar for example.
One of the first things we tried was this Low Carb Keto Chocolate Chip Cookie recipe that took me 15 minutes in total and it’s so easy that I think I’m going to make it regularly. It’s perfect for our sweet cravings!
To be honest, they’re not the most beautiful cookies you’re ever gonna make but they’re delicious! Because of the almond flour, it doesn’t get golden when cooked like a regular cookie, but both flavour and consistency are pretty similar.
Keto Chocolate Chip Cookies
- 1.5 cup Almond Flour
- 3/4 cup Stevia
- 1/2 cup Salted Butter (melted)
- 3/4 cup Chocolate Chips (Sugar Free)
- 1 Egg
- 1 tsp Vanila extract
- 1/2 tsp Baking Powder
- 1/2 tsp Xanthan Gum
Preheat your oven to 350ºF.
Line a cookie baking tray with parchment paper.
In a large bowl, mix stevia, vanilla extract, butter and egg using a (hand or stand) mixer for 20-30 seconds.
Add the rest of the ingredients to the mixture and mix it with your hands until it turns a doughy.
Form cookies into 2-3 inches and place them on the lined tray.
Bake for 10-12 minutes. be careful because it won't get a golden colour like regular cookies, so check the bottom to see if it looks cooked).
